Directions
- In a large saucepan, combine the peaches, apple juice, cinnamon, ginger, nutmeg, and vanilla.

- Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Increase the heat to medium and continue to simmer for an additional 20-30 minutes, stirring occasionally, until the mixture has thickened and is reduced to about 3 cups.
- Remove the preserves from the heat and let cool before serving.
