4 cups of fresh, ripe peaches (skinned, pitted, and diced)
1/2 cup of apple juice
1/4 teaspoon of ground cinnamon
1/4 teaspoon of ground ginger
1/4 teaspoon of ground nutmeg

Directions
In a large saucepan, combine the peaches, apple juice, cinnamon, ginger, nutmeg, and vanilla.
Bring the mixture to a boil over medium heat, stirring occasionally.
Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
Increase the heat to medium and continue to simmer for an additional 20-30 minutes, stirring occasionally, until the mixture has thickened and is reduced to about 3 cups.
Remove the preserves from the heat and let cool before serving.
