- 1/4 cup of olive oil
- 1/4 cup of red wine vinegar
Directions
- In a large bowl, combine the lettuce, black beans, corn, tomatoes, green peppers, and cheddar cheese.
- In a small bowl, whisk together the olive oil and red wine vinegar and pour over the salad.
- Toss the salad to combine.
- Sprinkle the crushed tortilla chips over the top of the salad and serve.
