2 (15-ounce) cans of white beans, drained and rinsed
1 (15-ounce) can of black beans, drained and rinsed
1 (14-ounce) can of diced tomatoes
1/4 cup tomato paste
1/4 cup apple cider vinegar
1 tablespoon honey
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Preheat the oven to 375°F.
Heat the olive oil in a large oven-safe pot over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
Stir in the beans, tomatoes, tomato paste, vinegar, honey, oregano, paprika, cumin, salt, and pepper.
Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
Transfer the pot to the preheated oven and bake for 30 minutes, stirring once halfway through.
Serve warm.
