Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans of white beans, drained and rinsed
  • 1 (15-ounce) can of black beans, drained and rinsed
  • 1 (14-ounce) can of diced tomatoes
  • 1/4 cup tomato paste
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large oven-safe pot over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Stir in the beans, tomatoes, tomato paste, vinegar, honey, oregano, paprika, cumin, salt, and pepper.
  4. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  5. Transfer the pot to the preheated oven and bake for 30 minutes, stirring once halfway through.
  6. Serve warm.
