Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 2 large eggs, lightly beaten
  • 3/4 cup milk
  • 1/4 cup melted butter
  • 1/2 cup chopped pecans

Directions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and brown sugar.
  2. In a separate bowl, mix together the pumpkin, eggs, milk, and melted butter.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Fold in the chopped pecans.
  5. Heat a large skillet over medium heat and lightly grease with butter or oil.
  6. Drop the batter by 1/4 cupfuls onto the skillet and cook for 2-3 minutes on each side, or until golden brown.
  7. Serve with butter and maple syrup.
