Ingredients

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 1 28-ounce can diced tomatoes
  • 1 bay leaf
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup white wine
  • 1 pound raw shrimp, peeled and deveined
  • 1 pound scallops, sliced
  • 1 pound tilapia fillets, cut into 2-inch pieces

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the oregano, thyme, tomato paste, diced tomatoes, bay leaf, red pepper flakes, salt and pepper.
  4. Add the white wine and bring the mixture to a simmer.
  5. Add the shrimp, scallops, and tilapia and simmer until the seafood is cooked through, about 10 minutes.
  6. Taste and adjust seasonings, if necessary.
  7. Serve hot with crusty bread or rice.
