Ingredients
- 1 large butternut squash, peeled and cubed
- 3 tablespoons olive oil
- 2 tablespoons creamy peanut butter
- 1 tablespoon honey
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
Directions
- Preheat oven to 400 degrees F.
- Place the cubed squash on a large baking sheet and drizzle with the olive oil. Toss to coat.
- In a small bowl, mix together the peanut butter, honey, cinnamon, nutmeg, salt and pepper.
- Spread the peanut butter mixture over the squash and toss to coat.
- Bake for 15-20 minutes, or until squash is tender and golden brown.
