Ingredients

  • 1 large butternut squash, peeled and cubed
  • 3 tablespoons olive oil
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. Place the cubed squash on a large baking sheet and drizzle with the olive oil. Toss to coat.
  3. In a small bowl, mix together the peanut butter, honey, cinnamon, nutmeg, salt and pepper.
  4. Spread the peanut butter mixture over the squash and toss to coat.
  5. Bake for 15-20 minutes, or until squash is tender and golden brown.
  6. Serve warm and enjoy!
