Ingredients
- 4 eggs
- 1/4 cup salsa
- 1/4 cup shredded cheddar cheese
- 4 corn tortillas
- salt and pepper to taste
- 1 tablespoon olive oil
- Preheat oven to 350°F.
- Heat olive oil in a skillet over medium-high heat.
- Add eggs to the skillet and cook until whites are set, about 3 minutes. Sprinkle with salt and pepper.
- Place tortillas on a baking sheet and top each with an egg. Top with salsa and cheese.
- Bake for 8-10 minutes, until cheese is melted and bubbling.
- Serve warm.
