Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 cups shredded cheese
- 1/4 cup chopped fresh parsley
- 24 mini bell peppers, tops removed and seeded
Directions
- Preheat oven to 375°F.
- In a large skillet over medium-high heat, cook the ground beef until no longer pink. Add the onion and garlic and cook until the vegetables are soft.
- Add the chili powder, cumin, paprika, oregano, salt, and pepper and stir to combine. Add the tomato paste and Worcestershire sauce and stir until everything is evenly combined.
- Add the shredded cheese and parsley and stir until the cheese is melted.
- Fill each mini bell pepper with the beef mixture and place on a baking sheet.
- Bake for 25-30 minutes, until the peppers are cooked through and the cheese is melted and bubbly.
