Ingredients
2 1/2 cups rolled oats
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup honey
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 cup dried fruit, such as raisins, dried cranberries, or diced apricots
Directions
Preheat oven to 350 degrees F. Grease a 9x13-inch baking dish.
In a large bowl, mix together oats, flour, baking powder, cinnamon, and salt.
In a separate bowl, mix together honey, coconut oil, and vanilla extract. Pour wet ingredients into the dry ingredients and mix until combined.
Stir in dried fruit. Spread mixture into prepared baking dish and press down to form an even layer.
Bake for 25-30 minutes, or until the top is golden brown. Allow to cool before cutting into bars.
