Ingredients
- 2 1/2 cups rolled oats
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup dried fruit, such as raisins, dried cranberries, or diced apricots
Directions
- Preheat oven to 350 degrees F. Grease a 9x13-inch baking dish.
- In a large bowl, mix together oats, flour, baking powder, cinnamon, and salt.
- In a separate bowl, mix together honey, coconut oil, and vanilla extract. Pour wet ingredients into the dry ingredients and mix until combined.
- Stir in dried fruit. Spread mixture into prepared baking dish and press down to form an even layer.
- Bake for 25-30 minutes, or until the top is golden brown. Allow to cool before cutting into bars.
