Ingredients

  • 1 head of broccoli, chopped
  • 1/4 cup of butter
  • 1/4 cup of flour
  • 1 cup of milk
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 cups of cheddar cheese, shredded
  • 3 eggs, separated
  • 1/4 cup of bread crumbs

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large saucepan, melt butter over medium heat.
  3. Add the flour and stir until the mixture is smooth and bubbly. Gradually add the milk, stirring constantly, and cook until the mixture thickens.
  4. Add the salt, pepper, and cheese, stirring until the cheese is melted.
  5. In a separate bowl, beat the egg whites until they form stiff peaks. Gently fold in the egg whites into the cheese sauce.
  6. In a greased 9x13 inch baking dish, spread the broccoli. Pour the cheese sauce over the broccoli and stir to combine.
  7. Sprinkle the bread crumbs over the top of the souffle.
  8. Bake for 25-30 minutes, or until the top is golden brown and the souffle is set.
