Mexican Rice Pilaf
Ingredients
1/2 cup almond flour
3 tablespoons coconut oil, melted
2 tablespoons honey
1/4 teaspoon sea salt
1/2 cup Greek yogurt
1/2 cup Key Lime juice
1/4 cup honey
1 teaspoon grated lime zest
2 tablespoons cornstarch
Directions
Preheat oven to 350°F.
In a medium bowl, combine almond flour, coconut oil, honey and salt. Mix until a dough forms.
Press dough into a 9-inch pie plate and bake for 15 minutes.
In a medium bowl, combine Greek yogurt, key lime juice, honey, lime zest and cornstarch. Whisk until smooth.
Pour key lime mixture into the pre-baked pie crust.
Bake for an additional 10 minutes.
Allow to cool before serving.
