Ingredients

  • 1/2 cup almond flour
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons honey
  • 1/4 teaspoon sea salt
  • 1/2 cup Greek yogurt
  • 1/2 cup Key Lime juice
  • 1/4 cup honey
  • 1 teaspoon grated lime zest
  • 2 tablespoons cornstarch

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine almond flour, coconut oil, honey and salt. Mix until a dough forms.
  3. Press dough into a 9-inch pie plate and bake for 15 minutes.
  4. In a medium bowl, combine Greek yogurt, key lime juice, honey, lime zest and cornstarch. Whisk until smooth.
  5. Pour key lime mixture into the pre-baked pie crust.
  6. Bake for an additional 10 minutes.
  7. Allow to cool before serving.
