Ingredients
- 2 eggs
- 3/4 cup sugar
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup butter, melted
- Vegetable oil, for frying
Directions
- In a large bowl, beat the eggs and sugar until light and fluffy.
- Add in the flour and baking powder, and stir until well combined.
- Pour in the melted butter and stir until a dough forms.
- Cover the dough and let it rest in the refrigerator for 15 minutes.
- On a lightly floured surface, roll out the dough to 1/4 inch thickness.
- Cut the dough into rectangles, about 2 inches by 3 inches.
- Fold the rectangles in half and press down the edges to form a bow tie shape.
- Heat the oil in a deep fryer or a heavy pot to 375 degrees F.
- Fry the cookies in batches until golden brown, about 1-2 minutes.
- Drain on paper towels and let cool before serving.
