Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup butter, melted
  • Vegetable oil, for frying

Directions

  1. In a large bowl, beat the eggs and sugar until light and fluffy.
  2. Add in the flour and baking powder, and stir until well combined.
  3. Pour in the melted butter and stir until a dough forms.
  4. Cover the dough and let it rest in the refrigerator for 15 minutes.
  5. On a lightly floured surface, roll out the dough to 1/4 inch thickness.
  6. Cut the dough into rectangles, about 2 inches by 3 inches.
  7. Fold the rectangles in half and press down the edges to form a bow tie shape.
  8. Heat the oil in a deep fryer or a heavy pot to 375 degrees F.
  9. Fry the cookies in batches until golden brown, about 1-2 minutes.
  10. Drain on paper towels and let cool before serving.
