Ingredients

  • 1 tablespoon olive oil
  • 1 onion, peeled and diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon caraway seeds
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 red cabbage, shredded
  • 1/2 cup apple cider
  • 1/2 cup chicken broth
  • 1 pound boneless skinless chicken thighs

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  2. Add the caraway seeds, black pepper, salt, nutmeg, ginger, cinnamon, and allspice and cook for 1 minute, stirring constantly.
  3. Add the cabbage and cook, stirring occasionally, until the cabbage is softened, about 10 minutes.
  4. Add the apple cider and chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  5. Add the chicken thighs and cook until the chicken is cooked through, about 10 minutes.
  6. Serve the chicken and cabbage with crusty bread or boiled potatoes.
