Ingredients
- 1 tablespoon olive oil
- 1 onion, peeled and diced
- 2 cloves garlic, minced
- 1/2 teaspoon caraway seeds
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/2 red cabbage, shredded
- 1/2 cup apple cider
- 1/2 cup chicken broth
- 1 pound boneless skinless chicken thighs
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
- Add the caraway seeds, black pepper, salt, nutmeg, ginger, cinnamon, and allspice and cook for 1 minute, stirring constantly.
- Add the cabbage and cook, stirring occasionally, until the cabbage is softened, about 10 minutes.
- Add the apple cider and chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Add the chicken thighs and cook until the chicken is cooked through, about 10 minutes.
- Serve the chicken and cabbage with crusty bread or boiled potatoes.
