Marinated Green Beans with Olives, Tomatoes and Feta

Ingredients

  • 2 pounds green beans, trimmed
  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the green beans and cook for 2-3 minutes, until tender-crisp.
  3. Drain the beans and rinse with cold water to stop the cooking process.
  4. In a large bowl, combine the olives, tomatoes, feta cheese, olive oil, red wine vinegar, oregano, salt and pepper.
  5. Add the green beans to the bowl and toss to combine.
  6. Cover the bowl and let the green beans marinate in the refrigerator for at least 1 hour.
  7. Serve the marinated green beans at room temperature.
