Ingredients
- 2 pounds green beans, trimmed
- ½ cup Kalamata olives, pitted and sliced
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions
- Bring a large pot of salted water to a boil over high heat.
- Add the green beans and cook for 2-3 minutes, until tender-crisp.
- Drain the beans and rinse with cold water to stop the cooking process.
- In a large bowl, combine the olives, tomatoes, feta cheese, olive oil, red wine vinegar, oregano, salt and pepper.
- Add the green beans to the bowl and toss to combine.
- Cover the bowl and let the green beans marinate in the refrigerator for at least 1 hour.
- Serve the marinated green beans at room temperature.
