Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 2 cups vegetable broth
  • 1 cup dried lentils
  • 1 (14-ounce) can diced tomatoes
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook until the vegetables are tender, about 5 minutes.
  3. Add the oregano, paprika, cumin, cayenne pepper, coriander, and turmeric and cook for another minute.
  4. Add the vegetable broth, lentils, and diced tomatoes and bring to a boil.
  5. Reduce the heat to low and simmer until the lentils are tender, about 20 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve.
