Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 2 cups vegetable broth
- 1 cup dried lentils
- 1 (14-ounce) can diced tomatoes
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery and cook until the vegetables are tender, about 5 minutes.
- Add the oregano, paprika, cumin, cayenne pepper, coriander, and turmeric and cook for another minute.
- Add the vegetable broth, lentils, and diced tomatoes and bring to a boil.
- Reduce the heat to low and simmer until the lentils are tender, about 20 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve.
