Ingredients
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons ground cinnamon
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 cup raisins
- 2 eggs, lightly beaten
- 1 cup milk
- 1/2 cup vegetable oil
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, white sugar, and brown sugar. Stir in the raisins.
- In a separate bowl, combine the eggs, milk, and vegetable oil. Add the wet ingredients to the dry ingredients and stir until just blended.
- Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture. Top with remaining batter and sprinkle with remaining cinnamon-sugar.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
