Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup Parmesan cheese, grated

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
  3. Add the shrimp and cook until they are just barely cooked through, about 3 minutes.
  4. Add the white wine and simmer for 2 minutes.
  5. Add the cream, butter, parsley, oregano, and salt and pepper to taste. Simmer for 2 minutes.
  6. Stir in the Parmesan cheese and simmer for 2 minutes, stirring occasionally.
  7. Serve hot over cooked pasta or rice.
