Ingredients
- 2 ripe avocados, peeled and pitted
- 4 hard-boiled eggs, peeled and diced
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon minced garlic
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Directions
- In a bowl, mash the avocados.
- Add the diced eggs, red onion, and parsley and mix together.
- In a separate bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper.
- Pour the dressing over the avocado-egg mixture and stir until everything is evenly coated.
- Serve immediately or refrigerate and serve cold.
