Ingredients

  • 2 ripe avocados, peeled and pitted
  • 4 hard-boiled eggs, peeled and diced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. In a bowl, mash the avocados.
  2. Add the diced eggs, red onion, and parsley and mix together.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the avocado-egg mixture and stir until everything is evenly coated.
  5. Serve immediately or refrigerate and serve cold.
