Ingredients
- 1 cup crushed pineapple, drained
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1/2 cup sugar
- 1/2 cup melted butter
- 1/2 cup light corn syrup
- 1/2 teaspoon vanilla extract
- 1 (8-ounce) package cream cheese, softened
- 1 (9-inch) prepared graham cracker crust
- 1/2 cup whipped cream
Directions
- In a large bowl, combine the pineapple, coconut, pecans, sugar, butter, corn syrup, and vanilla extract.
- Mix together until everything is well combined.
- Spread the mixture into the prepared graham cracker crust.
- In a medium bowl, beat the cream cheese until smooth.
- Spread the cream cheese over the top of the pineapple mixture.
- Spread the whipped cream over the top of the cream cheese layer.
- Refrigerate for at least one hour before serving.
