Ingredients

  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb dry pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup pesto
  • 1/2 cup shiitake mushrooms, sliced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook until al dente, about 8 minutes.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the shrimp and cook until just pink, about 2 minutes per side. Add the sun-dried tomatoes, pesto, and mushrooms. Cook until the mushrooms are tender, about 5 minutes.
  3. Drain the pasta and add to the skillet. Stir to combine. Taste and season with salt and pepper, as needed.
  4. Serve the pasta topped with freshly grated Parmesan cheese.
