Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg, lightly beaten
  • ¼ cup vegetable oil
  • 1 cup milk
  • 1 cup fresh or frozen cranberries

Directions

  1. Preheat oven to 375°F and line 12 regular-sized muffin cups with paper liners.
  2. In a medium bowl, mix together flour, oats, sugar, baking powder, baking soda, and salt. Make a well in the center of the mixture.
  3. In a separate bowl, whisk together egg, oil, and milk. Pour the wet ingredients into the well of the dry ingredients and stir until just combined.
  4. Gently fold in cranberries and divide the batter evenly among the 12 muffin cups.
  5. Bake in preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Allow muffins to cool in pans for 5 minutes before transferring to a wire rack to cool completely.
