Ingredients

  • 1 whole chicken, 4-5 pounds
  • 1 tablespoon of kosher salt
  • 1 teaspoon of freshly ground black pepper
  • 2 tablespoons of olive oil

Directions

  1. Preheat oven to 425°F.
  2. In a small bowl, mix together salt, pepper, and olive oil.
  3. Rub the mixture all over the chicken, making sure to get into all the nooks and crannies.
  4. Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F.
  5. Remove the chicken from the oven and let it rest for 10 minutes before carving and serving.
