Ingredients
1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic, minced
1 cup uncooked orzo pasta
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook for 2 minutes, stirring occasionally.
Add the orzo, chili powder, cumin, salt and pepper and stir to combine.
Add the vegetable broth and bring to a simmer. Cover and cook for 10 minutes, stirring occasionally.
Stir in the black beans and cook for an additional 3-5 minutes, or until the orzo is tender.
Serve warm.
