- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1 cup uncooked orzo pasta
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 1 (15-ounce) can black beans, drained and rinsed
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook for 2 minutes, stirring occasionally.
- Add the orzo, chili powder, cumin, salt and pepper and stir to combine.
- Add the vegetable broth and bring to a simmer. Cover and cook for 10 minutes, stirring occasionally.
- Stir in the black beans and cook for an additional 3-5 minutes, or until the orzo is tender.
- Serve warm.
