Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1 cup uncooked orzo pasta
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 1 (15-ounce) can black beans, drained and rinsed

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
  3. Add the orzo, chili powder, cumin, salt and pepper and stir to combine.
  4. Add the vegetable broth and bring to a simmer. Cover and cook for 10 minutes, stirring occasionally.
  5. Stir in the black beans and cook for an additional 3-5 minutes, or until the orzo is tender.
  6. Serve warm.
