Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 1 (14.5 oz.) can vegetable broth
  • 1 (15 oz.) can black beans, drained and rinsed
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped kale

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the herbs and spices and cook for 1 minute, stirring to combine.
  3. Add the tomatoes, vegetable broth, black beans, potatoes, carrots, celery, and kale. Stir to combine.
  4. Bring the soup to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
  5. Remove the cover and simmer for an additional 15 minutes, or until the vegetables are tender.
  6. Taste and adjust seasoning, if needed. Serve with crusty bread.
