1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme

Directions

Add the herbs and spices and cook for 1 minute, stirring to combine.
Add the tomatoes, vegetable broth, black beans, potatoes, carrots, celery, and kale. Stir to combine.
Bring the soup to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
Remove the cover and simmer for an additional 15 minutes, or until the vegetables are tender.
Taste and adjust seasoning, if needed. Serve with crusty bread.
