Ingredients

  • 1 lb cooked shrimp, peeled, deveined and diced
  • 1/2 lb cooked crabmeat, picked over and flaked
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 1/2 cup finely chopped jalapeno pepper
  • 1/2 cup sliced black olives
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 2 tablespoons chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Cheddar cheese
  • 10-12 soft taco-size flour tortillas
  • 1 (10 oz) can enchilada sauce
  • Sour cream, for garnish
  • Sliced green onions, for garnish
  • Sliced avocados, for garnish

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, mix together the shrimp, crabmeat, onion, bell pepper, jalapeno pepper, black olives, garlic, cumin, chili powder, oregano, salt, pepper, cilantro, and cheeses.
  3. Spoon the mixture into the tortillas, roll up, and place seam-side down in a 9x13 inch baking dish.
  4. Pour enchilada sauce over the enchiladas, and sprinkle with remaining cheese.
  5. Bake in preheated oven for 25 minutes, or until sauce is bubbly and cheese is melted.
  6. Garnish with sour cream, green onions, and avocados.
