Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1/2 cup mushrooms, chopped
  • 4 cups vegetable broth
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook for 5 minutes, stirring occasionally.
  3. Add the mushrooms and cook for an additional 3 minutes, stirring occasionally.
  4. Add the vegetable broth, tamari or soy sauce, tomato paste, Italian seasoning, smoked paprika, garlic powder, and onion powder and stir to combine.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Strain the broth through a fine-mesh sieve and discard the solids.
  8. Serve warm or store in an airtight container in the refrigerator for up to 5 days.
