Easy Cajun Jambalaya
Ingredients
1 pound fresh green beans, trimmed and cut into 1-inch pieces
2 slices bacon, cut into 1/2-inch pieces
1/2 cup sliced mushrooms
2 cloves garlic, minced
1/4 cup chicken broth
1 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Directions
In a large skillet, cook the bacon over medium heat until crisp. Remove the bacon from the skillet with a slotted spoon and set aside.
Add the mushrooms to the bacon fat in the skillet and cook until golden brown, about 5 minutes.
Add the garlic and cook for 1 minute more.
Add the green beans, chicken broth, salt, and pepper to the skillet and stir to combine. Cover and cook for 10 minutes, stirring occasionally.
Uncover and cook for an additional 5 minutes, or until the green beans are tender and the sauce has reduced.
Stir in the cooked bacon and serve.
