Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
2 cups long grain white rice, rinsed
3 cups chicken broth
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
Stir in the chili powder, cumin, and oregano and cook for 1 minute.
Add the rice and stir to coat with the spice mixture. Pour in the chicken broth and bring to a boil.
Reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
Stir in the cilantro and season with salt and pepper to taste. Serve warm.
