Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cans (14.5 ounces each) of diced tomatoes
  • 1 teaspoon of Italian seasoning
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • 4 cups of vegetable broth
  • 4 cups of cubed bread
  • 2 tablespoons of fresh parsley, chopped
  • 3 tablespoons of freshly grated Parmesan cheese

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Add the tomatoes, Italian seasoning, salt, and pepper. Cook for 5 minutes.
  4. Add the broth and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
  5. Add the bread cubes and simmer for 10 more minutes, stirring occasionally.
  6. Stir in the parsley and Parmesan cheese and cook for a few more minutes.
  7. Serve hot with extra Parmesan cheese and parsley.
