Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. In a medium bowl, combine the garlic powder, paprika, cumin, oregano, salt, pepper, chili powder, and cayenne pepper.
  2. Add the chicken cubes to the bowl and toss to coat with the spices.
  3. In a separate bowl, combine the olive oil, lime juice, garlic, oregano, salt, and pepper.
  4. Pour the marinade over the chicken and stir to combine.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight.
  6. Preheat the oven to 350 degrees F (175 degrees C).
  7. Transfer the chicken and marinade to a 9x13 inch baking dish.
