Ingredients

  • 2 pounds pork neck bones
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the pork neck bones and cook for 5 minutes, stirring occasionally.
  3. Add the onion, bell pepper, and garlic to the skillet and cook for 3 minutes.
  4. Stir in the diced tomatoes and seasonings and cook for 10 minutes.
  5. Reduce the heat to low and simmer for 45 minutes, stirring occasionally.
