Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, beat together the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract and beat until combined. Add the dry ingredients and mix until just combined.
  5. Stir in the oats.
  6. Drop the dough by tablespoonfuls onto ungreased baking sheets, about 2 inches apart.
  7. Bake for 10-12 minutes or until golden brown around the edges.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
