Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 cup butter, melted
  • 1/2 cup canned pumpkin puree
  • 1/2 cup packed light brown sugar
  • 1/4 cup milk
  • 1 egg, beaten
  • 1 cup prepared stuffing mix

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a medium bowl, combine the flour, baking powder, baking soda, salt, nutmeg, cinnamon, and ginger. Stir to combine.
  3. In a large bowl, mix together the melted butter, pumpkin puree, brown sugar, milk, and egg. Stir until combined.
  4. Add the dry ingredients to the wet ingredients, and stir just until combined. Fold in the stuffing mix.
  5. Pour the batter into the prepared loaf pan, and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool for 10 minutes before removing from the pan.
