Ingredients

  • 2 eggs
  • 3/4 cup mozzarella cheese, shredded
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup pizza sauce
  • 1/2 cup pepperoni, sliced
  • 1/4 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh basil, for garnish

Directions

  1. In a medium bowl, whisk together the eggs, mozzarella cheese, almond flour, garlic powder, Italian seasoning, salt, and pepper.
  2. Heat a waffle iron and lightly grease with cooking spray.
  3. Pour half of the batter into the preheated waffle iron and cook for 4-5 minutes, or until golden brown and crispy.
  4. Remove from the waffle iron and repeat with the remaining batter.
  5. Preheat oven to 400°F.
  6. On a baking sheet, place the chaffles and spread the pizza sauce over each chaffle.
  7. Top with pepperoni and mozzarella cheese.
  8. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  9. Sprinkle with Parmesan cheese and garnish with basil.
  10. Serve immediately and enjoy!
