Ingredients

  • 2 cups all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 2 1/2 cups milk
  • 1/4 cup melted butter
  • 2 tablespoons vegetable oil
  • Filling of choice (e.g. cheese, vegetables, etc)

Directions

  1. In a large bowl, whisk together the flour, eggs, salt, and milk until there are no lumps.
  2. Add the melted butter and whisk until the batter is completely smooth.
  3. Heat a non-stick crepe pan or skillet over medium-high heat and add a small amount of vegetable oil.
  4. Pour a small amount of the batter into the pan and swirl it around to evenly coat the bottom of the pan.
  5. Cook for about 1 minute, until the bottom is golden brown, then flip and cook for an additional minute.
  6. Remove from the pan and place on a plate. Repeat with the remaining batter.
  7. Fill each crepe with your desired filling and fold into quarters.
  8. Serve warm with a sprinkle of powdered sugar or your favorite sauce.
