Ingredients
- 2 cups all-purpose flour
- 4 large eggs
- 1/4 teaspoon salt
- 2 1/2 cups milk
- 1/4 cup melted butter
- 2 tablespoons vegetable oil
- Filling of choice (e.g. cheese, vegetables, etc)
Directions
- In a large bowl, whisk together the flour, eggs, salt, and milk until there are no lumps.
- Add the melted butter and whisk until the batter is completely smooth.
- Heat a non-stick crepe pan or skillet over medium-high heat and add a small amount of vegetable oil.
- Pour a small amount of the batter into the pan and swirl it around to evenly coat the bottom of the pan.
- Cook for about 1 minute, until the bottom is golden brown, then flip and cook for an additional minute.
- Remove from the pan and place on a plate. Repeat with the remaining batter.
- Fill each crepe with your desired filling and fold into quarters.
- Serve warm with a sprinkle of powdered sugar or your favorite sauce.
