Ingredients

  • 1 cup farro
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Directions

  1. Bring a pot of salted water to a boil. Add the farro and cook for 12-15 minutes, or until al dente.
  2. Drain the farro and transfer to a large bowl. Let cool slightly.
  3. Add the cherry tomatoes, bell pepper, red onion, parsley, and basil to the bowl with the farro.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper. Pour the mixture over the farro and vegetables.
  5. Toss to combine. Serve at room temperature or chilled.
