Ingredients
- 1 cup farro
- 1/2 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Directions
- Bring a pot of salted water to a boil. Add the farro and cook for 12-15 minutes, or until al dente.
- Drain the farro and transfer to a large bowl. Let cool slightly.
- Add the cherry tomatoes, bell pepper, red onion, parsley, and basil to the bowl with the farro.
- In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper. Pour the mixture over the farro and vegetables.
- Toss to combine. Serve at room temperature or chilled.
