Ingredients

  • 2 pounds beef stew meat, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 1/4 cup cold water
  • 1/4 cup fresh parsley, chopped (for garnish)

Directions

  1. Turn the Instant Pot to the “Saute” setting. Add the olive oil and beef to the pot and cook until the beef is browned, about 5 minutes.
  2. Add the onion, carrots, celery, garlic, thyme, oregano, and tomato paste and stir to combine.
  3. Add the beef broth, red wine (if using), bay leaf, and black pepper.
  4. Secure the lid and turn the vent to “Sealing”. Select the “Manual” or “Pressure Cook” setting and set the timer to 20 minutes.
  5. Once the cooking time is complete, let the pressure release naturally for 10 minutes and then manually release the remaining pressure.
  6. In a small bowl, whisk together the flour and cold water until smooth. Add the mixture to the stew and stir to combine.
  7. Turn the Instant Pot to the “Saute” setting and let the stew simmer until it thickens, about 5 minutes.
  8. Garnish with fresh parsley and serve. Enjoy!
