Ingredients
- 2 pounds beef stew meat, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 3 carrots, peeled and diced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 1 bay leaf
- 1/2 teaspoon black pepper
- 3 tablespoons all-purpose flour
- 1/4 cup cold water
- 1/4 cup fresh parsley, chopped (for garnish)
Directions
- Turn the Instant Pot to the “Saute” setting. Add the olive oil and beef to the pot and cook until the beef is browned, about 5 minutes.
- Add the onion, carrots, celery, garlic, thyme, oregano, and tomato paste and stir to combine.
- Add the beef broth, red wine (if using), bay leaf, and black pepper.
- Secure the lid and turn the vent to “Sealing”. Select the “Manual” or “Pressure Cook” setting and set the timer to 20 minutes.
- Once the cooking time is complete, let the pressure release naturally for 10 minutes and then manually release the remaining pressure.
- In a small bowl, whisk together the flour and cold water until smooth. Add the mixture to the stew and stir to combine.
- Turn the Instant Pot to the “Saute” setting and let the stew simmer until it thickens, about 5 minutes.
- Garnish with fresh parsley and serve. Enjoy!
