Ingredients
- 1 quart whole milk
- 1/4 cup white vinegar
- 1 teaspoon salt
- 1/4 cup sour cream (optional)
Directions
- In a large pot, heat the milk over medium-high heat until it comes to a simmer. Be sure to stir occasionally to prevent the milk from sticking to the bottom of the pot.
- Once the milk is simmering, reduce the heat to low and add the vinegar and salt. Stir until the salt is completely dissolved.
- Turn off the heat and let the milk sit for 5 minutes. The milk will separate into curds and whey.
- Using a mesh strainer, strain the mixture over a large bowl. Discard the whey and transfer the curds to a separate bowl.
- If desired, add the sour cream and stir until combined. Taste and add additional salt, if desired.
- Refrigerate the cottage cheese until ready to serve.
