In a large pot, heat the milk over medium-high heat until it comes to a simmer. Be sure to stir occasionally to prevent the milk from sticking to the bottom of the pot.
Once the milk is simmering, reduce the heat to low and add the vinegar and salt. Stir until the salt is completely dissolved.
Turn off the heat and let the milk sit for 5 minutes. The milk will separate into curds and whey.
Using a mesh strainer, strain the mixture over a large bowl. Discard the whey and transfer the curds to a separate bowl.
If desired, add the sour cream and stir until combined. Taste and add additional salt, if desired.
Refrigerate the cottage cheese until ready to serve.
