Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 1 tablespoon water (optional)

Directions

  1. In a medium bowl, combine the flour, eggs, olive oil, and salt. Stir with a wooden spoon to combine.
  2. Knead the dough for 5 minutes until it is smooth and pliable.
  3. Divide the dough into 2 or 3 balls, depending on the size of your work surface.
  4. Roll each ball out into a thin sheet. The thinner the sheet, the thinner your tagliatelle will be.
  5. Cut the dough into thin strips. The strips should be about 1/4 inch thick.
  6. Sprinkle the tagliatelle with a light dusting of flour to keep them from sticking together.
  7. Bring a large pot of salted water to a boil and add the tagliatelle. Cook for 3-5 minutes, or until al dente.
  8. Drain the pasta and serve with your favorite sauce and garnishes.
