Ingredients
- 2 pounds of beef stew meat
- 1/4 cup of all-purpose flour
- 2 tablespoons of olive oil
- 2 large carrots, chopped
- 1 large onion, diced
- 3 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 tablespoons of tomato paste
- 1 cup of beef broth
- 2 tablespoons of Worcestershire sauce
- 2 bay leaves
- 4 large potatoes, peeled and cubed
Directions
- Preheat the oven to 350°F.
- In a large bowl, mix the beef, flour, and 1 teaspoon of salt together until combined.
- In a large Dutch oven over medium-high heat, heat the olive oil. Add the beef and cook until the beef is browned, about 5 minutes.
- Add the carrots, onion, garlic, and remaining teaspoon of salt. Cook for an additional 5 minutes.
- Add the tomato paste, beef broth, Worcestershire sauce, and bay leaves. Stir to combine.
- Add the potatoes and stir to combine.
- Cover the pot and place in the preheated oven. Bake for 60 minutes.
- Remove from the oven and serve hot.
