Ingredients

  • 1 pork loin, 3-4 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 2 cups fresh cranberries
  • 1/2 cup dried figs, chopped
  • 1/4 cup honey
  • 1/4 cup orange juice

Directions

  1. Rub the pork loin with olive oil and season with salt, pepper, garlic powder, oregano, cumin, and smoked paprika.
  2. Place the pork loin in the slow cooker.
  3. In a medium bowl, combine the cranberries, figs, honey, and orange juice. Mix until combined.
  4. Spread the cranberry mixture over the pork loin.
  5. Cover the slow cooker and cook on low for 8 hours.
  6. Once done, let the pork rest for 10 minutes before slicing.
