Ingredients

  • 2 tablespoons olive oil
  • 2 pounds of pork, diced into 1-inch cubes
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 teaspoon of smoked paprika
  • 2 tablespoons of tomato paste
  • 2 cups of chicken broth
  • 1 cup of white wine
  • 1 cup of diced potatoes
  • 1 cup of diced butternut squash
  • 1/2 cup of frozen peas
  • 2 tablespoons of fresh parsley, chopped

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced pork and cook for 5 minutes, stirring occasionally.
  3. Add the onion, carrots, celery, garlic, thyme, oregano, and smoked paprika and cook for another 5 minutes, stirring occasionally.
  4. Stir in the tomato paste and cook for 1 minute.
  5. Add the chicken broth, white wine, potatoes, and butternut squash. Bring to a boil, reduce heat, and simmer for 15 minutes.
  6. Stir in the frozen peas and cook for another 5 minutes.
  7. Stir in the fresh parsley and season with salt and pepper to taste.
  8. Serve hot with a side of crusty bread.
