Ingredients
- 2 tablespoons olive oil
- 2 pounds of pork, diced into 1-inch cubes
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 teaspoon of smoked paprika
- 2 tablespoons of tomato paste
- 2 cups of chicken broth
- 1 cup of white wine
- 1 cup of diced potatoes
- 1 cup of diced butternut squash
- 1/2 cup of frozen peas
- 2 tablespoons of fresh parsley, chopped
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the diced pork and cook for 5 minutes, stirring occasionally.
- Add the onion, carrots, celery, garlic, thyme, oregano, and smoked paprika and cook for another 5 minutes, stirring occasionally.
- Stir in the tomato paste and cook for 1 minute.
- Add the chicken broth, white wine, potatoes, and butternut squash. Bring to a boil, reduce heat, and simmer for 15 minutes.
- Stir in the frozen peas and cook for another 5 minutes.
- Stir in the fresh parsley and season with salt and pepper to taste.
- Serve hot with a side of crusty bread.
