Marinara Sauce
Ingredients
2 tablespoons olive oil
2 pounds of pork, diced into 1-inch cubes
1 onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
4 cloves of garlic, minced
1 teaspoon of dried thyme
1 teaspoon of dried oregano
1 teaspoon of smoked paprika
2 tablespoons of tomato paste
2 cups of chicken broth
1 cup of white wine
1 cup of diced potatoes
1 cup of diced butternut squash
1/2 cup of frozen peas

Directions
Heat the olive oil in a large pot over medium heat.
Add the diced pork and cook for 5 minutes, stirring occasionally.
Add the onion, carrots, celery, garlic, thyme, oregano, and smoked paprika and cook for another 5 minutes, stirring occasionally.
Stir in the tomato paste and cook for 1 minute.
Add the chicken broth, white wine, potatoes, and butternut squash. Bring to a boil, reduce heat, and simmer for 15 minutes.
Stir in the frozen peas and cook for another 5 minutes.
Stir in the fresh parsley and season with salt and pepper to taste.
Serve hot with a side of crusty bread.
