Ingredients
3 cups chicken broth
1/2 cup lentils (any type)
1/2 onion, diced
2 cloves garlic, minced
1 carrot, diced
1/2 cup mushrooms, chopped
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon black pepper
1/2 teaspoon sea salt
1/2 cup cooked chicken, shredded or diced
1/4 cup miso paste
Directions
In a large pot, bring the chicken broth to a boil.
Add the lentils and reduce the heat to a simmer. Cook for 15 minutes, stirring occasionally.
Add the onion, garlic, carrot, mushrooms, thyme, oregano, black pepper, and salt. Simmer for 10 minutes.
Stir in the cooked chicken and miso paste, simmmer for 5 minutes.
Serve hot and enjoy!
