Ingredients
- 3 cups chicken broth
- 1/2 cup lentils (any type)
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1/2 cup mushrooms, chopped
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/2 teaspoon sea salt
- 1/2 cup cooked chicken, shredded or diced
- 1/4 cup miso paste
Directions
- In a large pot, bring the chicken broth to a boil.
- Add the lentils and reduce the heat to a simmer. Cook for 15 minutes, stirring occasionally.
- Add the onion, garlic, carrot, mushrooms, thyme, oregano, black pepper, and salt. Simmer for 10 minutes.
- Stir in the cooked chicken and miso paste, simmmer for 5 minutes.
- Serve hot and enjoy!
