Ingredients
- 1 pound dried pinto beans
- 3 tablespoons bacon fat
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups chicken broth
Directions
- Soak the pinto beans in a bowl of cold water overnight.
- Drain the beans and rinse them with cold water.
- In a large pot, heat the bacon fat over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
- Add the beans and chicken broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 1 hour.
- Uncover and continue to simmer until the beans are tender, about 30 minutes.
- Serve warm.
