Ingredients

  • 1 pound dried pinto beans
  • 3 tablespoons bacon fat
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups chicken broth

Directions

  1. Soak the pinto beans in a bowl of cold water overnight.
  2. Drain the beans and rinse them with cold water.
  3. In a large pot, heat the bacon fat over medium heat.
  4. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
  6. Add the beans and chicken broth and bring to a boil.
  7. Reduce the heat to low, cover, and simmer for 1 hour.
  8. Uncover and continue to simmer until the beans are tender, about 30 minutes.
  9. Serve warm.
