Zucchini Boats with Ground Turkey

Ingredients

  • 4 medium zucchini, halved lengthwise
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb. ground turkey
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheese (cheddar, mozzarella, or a mixture of both)

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Using a spoon, scoop out the zucchini pulp and discard.
  3. Brush the zucchini boats with olive oil and place them on the prepared baking sheet. Bake for 15 minutes.
  4. While the zucchini is baking, heat a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the ground turkey, oregano, salt, and pepper and cook until the turkey is cooked through, about 8 minutes.
  6. Add the chicken broth and diced tomatoes and simmer for 5 minutes.
  7. Remove the zucchini boats from the oven and fill with the ground turkey mixture. Top with the shredded cheese.
  8. Return the zucchini boats to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and serve hot.
