Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts, cut into cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the chicken cubes and cook for 5 minutes, stirring occasionally.
  3. Add the onions and garlic and cook for an additional 5 minutes.
  4. Add the wine, chicken broth, cream, cheese, and salt and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Stir in the parsley and serve over rice or pasta.
