Ingredients
- 2-3 pounds corned beef brisket
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2-3 bay leaves
- 2 cups of Guinness beer
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 3-4 cups of water
Directions
- Place the corned beef in a large pot and cover with water. Add the onion, garlic, bay leaves, beer and spices. Simmer for 2 hours over low heat.
- Remove the corned beef from the pot and let it cool. Cut the brisket into thin slices.
- Serve the corned beef with mashed potatoes and your favorite vegetables. Enjoy!
