Ingredients

  • 2-3 pounds corned beef brisket
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2-3 bay leaves
  • 2 cups of Guinness beer
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 3-4 cups of water

Directions

  1. Place the corned beef in a large pot and cover with water. Add the onion, garlic, bay leaves, beer and spices. Simmer for 2 hours over low heat.
  2. Remove the corned beef from the pot and let it cool. Cut the brisket into thin slices.
  3. Serve the corned beef with mashed potatoes and your favorite vegetables. Enjoy!
