Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 2 bay leaves
  • 6 cups low-sodium chicken broth
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 2 cups cooked chicken, shredded

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the onion, garlic, thyme, oregano, and bay leaves and cook until the onion is softened, about 5 minutes.
  2. Add the chicken broth, black pepper, red pepper flakes, and salt to the pot and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Stir in the cooked chicken and simmer for an additional 5 minutes.
  4. Remove the bay leaves and serve.
