Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and chopped
  • 1 anaheim pepper, seeded and chopped
  • 1 poblano pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 2 boneless, skinless chicken breasts, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4.5 ounce) can chopped green chiles
  • 1 (15.5 ounce) can white beans, drained and rinsed
  • 1 (14 ounce) can chicken broth

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the jalapeno, anaheim, poblano, and bell peppers and cook for 5 minutes more.
  3. Add the chicken and cook until the chicken is cooked through, about 5 minutes.
  4. Stir in the cumin, smoked paprika, chili powder, cayenne pepper, salt, and black pepper.
  5. Add the tomatoes, green chiles, white beans, and chicken broth.
  6. Bring the mixture to a boil, reduce the heat to low, and simmer for 20 minutes.
  7. Taste and adjust the seasonings, if desired.
  8. Serve with a dollop of sour cream and tortilla chips, if desired.
