Ingredients

  • 1 pound ground beef
  • 1 package taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 jar salsa
  • 1 package tortillas
  • 2 cups shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees.
  2. In a large skillet over medium-high heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and cook according to the package directions.
  4. Stir in black beans, corn, and salsa.
  5. In a 9x13-inch baking dish, layer half of the tortillas, followed by half of the beef mixture, and then half of the cheese.
  6. Repeat layers with remaining ingredients.
  7. Bake for 25-30 minutes, until cheese is melted and bubbly.
  8. Let cool for 10 minutes before serving.
